‘Tis that time of year for zucchini. If you have been blessed with a bumper crop of zucchini and you’re looking for an easy dinner idea, look no further! This dish has chicken, ranch seasoning, bacon, cheese and zucchini. What’s not to love? It has been enjoyed by my whole family…even those individuals less than enthusiastic about zucchini.

Ingredients
  • 6 c zucchini (cut into 1-inch pieces)
  • 2.5-3 pounds chicken breasts
  • 6-8 slices bacon (cooked and crumbled)
  • 6-8 ounces mozzarella cheese (shredded)
  • 1/2 cup parmesan cheese (grated)
  • 1oz envelope or 2 TBLSP hidden valley ranch seasoning (dry seasoning)
Instructions
  1. Preheat oven to 375 degrees. Grease a 9x13 inch baking dish.

  2. Sprinkle each chicken breast with ranch seasonings to cover both sides and place in greased baking dish.

  3. Place the zucchini over the top of the chicken, spreading it out evenly in the baking dish.

  4. Top with parmesan cheese, mozzarella cheese and bacon.

  5. Bake in 375 degree oven for 35-45 minutes (this will vary depending on the thickness of the chicken breasts) until the internal temperature of the chicken reaches 165 degrees.
