Grilled Gluten Free Chicken Fajitas

Description

These Gluten Free Chicken Fajitas are tender, juicy and marinated to perfection in under an hour! Sure to please both gluten free as well as non-gluten free guests. The marinade is used to bring tenderness and juiciness to the chicken, and the leftover marinade is used to cook the pepper and onion blend. Plenty of flavor and deliciousness to go around!

  1. Place chicken tenderloins into a bowl or gallon bag (I still put my gallon bag inside a bowl just in case it leaks).

  2. In a small bowl, mix together the marinade ingredients and pour over the chicken. Cover the bowl and let marinate at room temperature for 30-40 minutes.

  3. When chicken is almost done marinating, preheat grill. Carefully remove the chicken from the bag (reserving the marinade) and place on the grill, making sure to reserve all the marinade for the pepper and onions. Grill the chicken until the internal temperature reaches 165 degrees (about 8-10 minutes). Take off the grill, cover and let rest.

  4. While the chicken is resting, heat a pan on the stove over medium high heat. Add leftover marinade, peppers and onions. Cook for about 4-6 minutes until slightly tender, but still crunchy.  (I cooked the onions in a separate pan to please guests)

  5. Serve your fajitas with tortillas and your choice of toppings....and maybe even a margarita!
