Zucchini Ranch Chicken with BACON! (Gluten Free)
Description
‘Tis that time of year for zucchini. If you have been blessed with a bumper crop of zucchini and you’re looking for an easy dinner idea, look no further! This dish has chicken, ranch seasoning, bacon, cheese and zucchini. What’s not to love? It has been enjoyed by my whole family…even those individuals less than enthusiastic about zucchini.

Preheat oven to 375 degrees. Grease a 9x13 inch baking dish.

Sprinkle each chicken breast with ranch seasonings to cover both sides and place in greased baking dish.

Place the zucchini over the top of the chicken, spreading it out evenly in the baking dish.

Top with parmesan cheese, mozzarella cheese and bacon.

Bake in 375 degree oven for 35-45 minutes (this will vary depending on the thickness of the chicken breasts) until the internal temperature of the chicken reaches 165 degrees.
